The Good Ol' Boy Burger

Yield: 2 servings 

Ingredients

Pickles

250g (9oz) baby (kirby) cucumbers, thinly sliced 2 garlic cloves, thinly sliced

Small bunch of dill

2 tsp black peppercorns

2 tbsp mustard seeds

240ml (1 cup) water

120ml (1⁄2 cup) white malt vinegar 2 tbsp salt

2 tbsp sugar

Pinch of chilli flake

 

Dirty Truffle Mayo

230g (1 cup) mayonnaise

2 tbsp Sriracha

2 tbsp Worcestershire sauce

1 garlic clove, finely chopped then crushed to a paste with a pinch of rock salt

2 tbsp American mustard

4 tbsp of chopped black truffles

1 tbsp of truffle oil

 

Roasted bone marrow

Bone Marrow

1 tsp of salt

1 tsp of thyme

 

Patties

2 x Legacy maker Patties

2 x white onions

1 tbs American Mustard

Instructions

The World’s Best burger should be a classic burger, a burger that takes you back and reminds you of every great cheeseburger you’ve ever had. A classic burger done well. Mustard fried Oklahoma style smash patty, roasted bone Marrow, American Cheese, Scratch made dill pickle, dirty truffle mayonnaise.

Pickles

Toast off mustard seeds and peppercorns, then add the vinegar, water, sugar and salt to dissolve and bring to the boil then pour over the chopped cucumbers, dill and garlic. The pickles will be ready in 30 minutes.

Dirty Truffle Mayo

Mix all the ingredients in a bowl.

Roasted bone marrow

Season the bones with salt and thyme and place in an oven at 350f for 30 minutes.

Thinly slice your onions 1mm thick with a mandolin.

Place ball of meat on a searing hot grill, pile it with the thinly sliced onions, and smash the onions into the meat with a spatula creating a flat smash patty.

Season with salt pepper, onion powder and garlic powder then spray a little bit of American mustard on the patties.

Once the meat is starting to cook flip the patties and cook out the onions.

Spoon some bone marrow on top of the patties,

Add the cheese to the patties and bone marrow and steam under a cloche to melt the cheese 

Place the dirty truffle mayonnaise on the base and the scratch-made gherkins on top of the cheesed and steamed patties. then assemble.
